The K1 has 16Gb of memory but slower GPU:s, that would probably be the best bang for buck.
2. How much video RAM needs to be given to the average user who just wants streaming video to not be so glitchy?
vSGA is not improving streaming video, it improves 3D rendering like Google Earth 3D, Sketchup etc
I am not so sure that vSGA is the answer to the issues, have you done a proper healthcheck to make sure that everything is working ok and that PCoIP is performing well?
