If 'n' will end up being, say, 20, I would say the effort associated with maintaining it as such would be high and you could consider 2-4TB datastores.
If 'n' is much smaller, I'd agree with this tactic.
This is of course dependant on size. I have one environment where every single VM is 2-6TB. Building 1TB LUNS would be a mess there. I have another environment covered in 20-40GB Linux VPS's, running 6TB LUNs there would be crazy.
Edit: Why would new incoming hosts not be ESXi 5.1?
